Seasonal, fresh and ever-changing are the hallmarks of our daily menus. This page is generally updated twice per month (with two weeks of menus at a time). Each week’s menu has a handy print feature if you would like a hard copy.

Our Daily Special Menu is an all-inclusive offering for $21.95 per person per day (tax and service not included).

*Chafing dishes, basic buffet linens, serving and eating utensils included.

DAILY SPECIAL MENU – June 10-14

Monday

Blackened Fish  – garlic powder, onion powder, cayenne, paprika, seasoning, thyme, cumin, white fish fillets cooking oil, lemon wedges.  On Side – pan fried and fresh  lemon wedges

Eisenhauer’s Mac & Cheese – pasta, butter, three cheese blend, jarlsberg or gruyere, fontina, cheddar, mild, light cream, seasoning, vegetable boullion VEGETARIAN/CONTAINS DAIRY

Rainbow Vegetable Side – yellow and green bell pepper, mushrooms, zucchini, tomatoes, garlic, olive oil, parsley, thyme, rosemary, black olives seasoning VEGAN

Salad  – Power Greens – baby spinach, baby kale, pistachios, broccoli, edamame, cucumber, avocado, garlic, lemon juice, garlic, olive oil

Tuesday

Teriyaki Chicken – chicken legs and thighs, cilantro, oil, sake, mirin, soy sauce, sugar, ginger root, garlic

Side of Fried Rice – rice, vegetable oil, eggs, garlic, ginger, shredded carrots, bell pepper, scallions, peas, soy sauce VEGETARIAN

Thai Red Curry – salad oil, onions, asparagus, coconut milk, red curry paste, lime leaves, baby spinach, bok choy, Napa cabbage, cilantro VEGAN

Salad – Avocado, Mango, and Pineapple with Pistachios and Pickled Shallots – shallots, rice vinegar, olive oil, red wine vinegar, arugula, pistachios, mint, basil, avocados, kiwi, mango, pineapple

 

Wednesday

Barbacoa  – chuck roast, garlic, chipotles in adobo sauce, green chiles, onion, lime juice, apple cider vinegar, bay leaves, cumin, oregano, seasoning, cloves, beef broth.  On Side – Salsa Roja  garlic Serrano chiles, Roma tomatoes, canola oil, seasoning – Tortillas

Chile Relleno – – pasilla chiles queso fresco cheese, eggs, flour, vegetable oil, Roma tomatoes, garlic, vegetable broth, vegetable oil, oregano  VEGETARIAN/CONTAINS DAIRY

Corn Stuffed Poblano Chiles – poblano chiles, garlic, tomatillos, cilantro, lime juice, seasoning, olive oil, corn, kidney beans, goat cheese crumbles VEGETARIAN/CONTAINS DAIRY

Spanish Rice – vegetable oil, onion, rice, vegetable rice, salsa

Black Beans VEGETARIAN

Chips and Toppings – tortilla chips, salsa, sour cream, guacamole, citrus wedges

Salad –  Light Mexicali – mixed Greens with iceberg, tomatoes, black olives, radishes, sliced red onion, mixed shredded cheese  Dressing – Spicy Fiesta

 

Thursday

Grilled Salmon – salmon fillets, olive oil, garlic, seasoning, dill, lemon zest, lemon juice.  On Side –  lemon wedges

Rice Pilaf – Onion, bell pepper, rice, saffron, vegetable broth, orange zest, peas, raisins.  On Side Pistachios  VEGAN

Green Beans with Tofu & Slivered Almonds – Stir Fry – green beans, grilled tofu, garlic, seasoning, ginger, onions, vegetable stock, chili oil.  On Side  slivered almonds VEGAN

Oven Roasted Vegetables cauliflower, carrots, zucchini and tomatoes, salad oil, seasoning VEGAN

Salad  – Insalata Caprese – tomatoes, mozzarella cheese, basil leaves, olive oil, seasoning

Friday

Spaghettini – ground turkey, onion, tomato juice, tomato paste, seasoning, tobacco sauce, brown sugar, shredded cheddar CONTAINS DAIRY

Vegetarian Mushroom Bolognese – cremini mushrooms, carrots, onion, tomatoes, olive oil, dried porcini mushrooms, garlic, tomato paste, red wine, vegetable broth, soy sauce, soy creamer, seasoning, fettuccine VEGETARIAN

 Variety of Roasted Vegetables – olive oil, seasoning, dried herbs, red potatoes, firm tofu, carrots, eggplant, onions VEGAN

Salad – Big Italian – romaine lettuce, bell pepper, cucumbers, carrots, grape tomatoes, olives, parsley basil, oregano, garlic, red wine vinegar, olive oil, seasoning, honey  On Side –  feta crumbles
