Seasonal, fresh and ever-changing are the hallmarks of our daily menus. This page is generally updated twice per month (with two weeks of menus at a time). Each week’s menu has a handy print feature if you would like a hard copy.

Our Daily Special Menu is an all-inclusive offering for $21.95 per person per day (tax and service not included).

*Chafing dishes, basic buffet linens, serving and eating utensils included.

DAILY SPECIAL MENU – January 7-11

Monday

Lime-Roasted Cilantro Chicken with Cippolines in a Tomatillo Salsa – chicken, cippolines, olive oil, lime juice, cilantro, honey, shallots, cumin, pepper

Roasted Root Vegetables & Others – Red potatoes, roasted Roma tomatoes, parsnips, Portobello mushrooms, squash, olive oil, seasoning

Spring Vegetable and Quinoa Pilaf – vegetable broth, quinoa, golden beets, olive oil, garlic, orange and red bell pepper, asparagus, zucchini, seasoning, green onions, parsley VEGAN

Salad –  Mixed Greens with Romaine & Vegetables – greens, shredded carrots, sliced cucumber, grape tomatoes, bell pepper, avocado, goat cheese crumbles,  croutons with French dressing

Tuesday

Baked Fresh Salmon Filets – salmon fillets marinated in olive oil, diced green onion, garlic, dill weed & slight drizzle of lemon juice.  Served with lemon wedges.

Side of Steamed Rice –

Simple Vegan Tofu and Vegetable Stir-Fry with Ginger – tofu, vegetable oil, cauliflower, broccoli, carrots, onions, bell pepper, snow peas, mushrooms, scallions, soy sauce, lemon juice, ginger VEGAN

Salad  –Spinach Salad – spinach, mandarin oranges, purple onion, feta cheese, cranberries  On Side – feta cheese & almonds Balsamic vinaigrette

Wednesday

Chicken Piccata – chicken breasts, flour, olive oil, lemon juice, chicken stock, capers, parsley

Side of Israeli Couscous – couscous, garlic, vegetable broth, seasoning, parsley

Sweet Potato, Parsnip, and Carrot Tagine – Sweet potatoes, parsnips, baby carrots, shallots, ginger root, olive oil vegetable bouillon, honey, cinnamon, prunes, seasoning   VEGAN/VEGETARIAN

Salad –  Quinoa & Mango – quinoa mango, green onions, dried cranberries, parsley, olive oil, vinegar, Dijon mustard

Thursday

Southwest Style Cod – cod, small onion, green pepper, olive oil, garlic, tomato sauce, tomatoes, ripe olives, cumin, hot pepper sauce

Garden Vegetable Fusilli Primavera  – fusilli pasta, zucchini, carrots, Italian seasoning, olive oil, grape tomatoes, garlic, vegetable broth white wine, fresh basil  On Side – parmesan cheese  VEGETARIAN/DAIRY OPTION/CONTAINS GLUTEN

Spinach and Artichoke Stuffed Portobellos – olive oil, Portobello mushroom caps, balsamic vinegar, garlic, onion, spinach, artichoke hearts, seasoning, thyme, toasted vegetable stock, parmesan cheese  ON SIDE – Italian Bread Crumbs  VEGETARIAN/ GLUTEN OPTION

Salad –  Icebox Salad – romaine, sugar snap peas, radishes, English cucumber, green onions, peas, olive oil, seasoning, dill, mint, chives

Friday

Korean Beef Rice Bowl – beef, soy sauce, canola oil, ginger, garlic, onion, carrots, zucchini, spinach  On Side sesame seeds

Veggie (Fajita Style) Rice Bowl – Olive oil, sliced bell pepper, red onion, baby bella mushrooms, garlic, cumin, chili powder, paprika, lime juice  On Side – chopped cilantro, sliced avocado  VEGAN
